Panning is the process of coating an interior (hazelnuts, coffee beans, dried/candied fruit, etc) with layers of chocolate or other coatings while they tumble over each other and round up in a large bowl (aka the Pan). These can be finished with dry powders like cocoa or confectioners sugar, spices or they can be colored and glazed until they are super shiny.
