Sharing the land with coconut and nutmeg inherently impart some very slight and subtle flavors as well as dried sweet apricot, green coffee and a hint of marzipan.
Cacao Bean Notes:
The beans come direct trade through Meridian Cacao from Anamalai Farm near to city of Pollachi. Which interestingly is more famous for its cultivation of coconuts and nutmeg than cacao. The beans are Forastero and Criollo and Anamalai's practices include cascading boxes for fermentationa nd raised beds for drying. India doesn't produce a lot of cacao even though some pockets of it's climate is perfect for it.
Each chocolate bar is sealed in signature kraft paper packaging and hand signed by Chef Johnny

Store chocolate in a cool, dry place between 60-70 degrees
